A firkin is a small keg in which the fermented base beer gets an additional shot of yeast and sugar (we use a small amount of honey) creating a secondary fermentation and carbonation. It will sit up on the bar and slightly warm up to a cellar temperature. Today we are tapping a firkin of our Minion IPA on Mosaic and Simcoe hops. Should go perfectly with a flatbread pizza from the Rivers Edge Bistro (4-8).
